Break-even point

The break-even point is how much you need to sell per month just to cover your fixed costs. Before that, every sale goes toward rent, payroll and the like; after it, you start making a profit.

Break-even

What you need

  1. Operating costs: in Operating costs, add each monthly fixed cost (Concept and Monthly amount): rent, payroll, utilities, insurance, software…
  2. At least one published dish.
  3. Ideally, sales recorded in the POS.

Your progress this month

When the calculation uses this month's sales, the top section tells you how you're doing:

  • Break-even revenue: your goal for the month, plus what it means per day and in dishes.
  • $X to go: how much you still need to sell, and how much you need per day over the days left. Once you reach it, the box turns green with your estimated profit.
  • Progress bar: sales so far against the goal. The vertical mark is today: if the bar is short of the mark, you're behind; past it, you're ahead.
  • Projection: at your current pace, what you'd close the month at and whether you'd reach break-even.

Below, How it's calculated shows the math step by step.

How to read it

Figure Meaning
Monthly fixed costs The sum of your operating costs.
Revenue this period What you've sold.
Variable cost this period What the ingredients of those sales cost.
Average contribution margin What's left from each dollar of sales after ingredients.
Break-even revenue Monthly sales needed to cover fixed costs.
Break-even units The same, in dishes.
Average ticket Average amount per order.

Kitchfly tells you which data it used: this month's sales, all recorded sales (if there aren't any this month yet), or an estimate from your menu's average margin (if there are no sales yet).

Estimated dishes sold per month

In Settings → Sales & costs, Estimated dishes sold per month is used to spread fixed costs across each dish for the Dashboard's suggested price. Update it once you have a few weeks of real sales.
